Cheesy Potatoes

CHEESY POTATOES IN FOIL

3 large baking potatoes, peeled, sliced
Salt and pepper to taste
4 or 5 crisp-cooked bacon slices, drained, crumbled
1 large onion, sliced
2 cups (8 ounces) cubed sharp Cheddar cheese
1/2 cup (1 stick) margarine, sliced

Large sheet of heavy duty foil, sprayed in center with non-stick cooking spray. Avoid getting spray on the edges where the foil will be folded.

Preheat gas grill to low. Place the potatoes on the large sheet of heavy-duty foil and sprinkle with salt, pepper and bacon. Top with onion, cheese and margarine. Seal foil with a double fold, leaving room for expansion. Place foil packet on grill. Grill for 1 hour or until potatoes are tender, turning packet occasionally. This can be prepared over coals also, adjust the temperature so the potatoes don't burn.

P.S. I have NO idea how to tell if the potatoes are tender without destroying the packet they're cooking in, so don't ask. Maybe you could remove the packet from the heat, and with oven mitts on both hands, squeeze it slightly. If you give it an hour, it should be done. :)

Just had some last night thumbUp I use a little mozarella and parmesean cheese in mine along with the cheddar. I peel my tin foil open just a little and poke with a fork to test the potatoes.

Helpful hint....I use real crumbled bacon bits that you buy in the salad dressing isle. Saves time on cooking the bacon. Tastes the same IMO. The kids love these!

I don't think I've ever had those. I buy bacon when it's on sale. I fry all of it at once and package it - 4 slices per sandwich size bag - then freeze it. I use it for quick "big" breakfasts (2 slices bacon, 1 egg, 2 slices toast) at home and away, for cooking (as in the above recipe), or for salad toppings. Usually, the day I cook the bacon, we'll have our "big" breakfast, and I'll package the rest.

That works very well for me - I'm retired and can take the time to do things like that.

One of the best things ever to put in your cooking inventory is the aluminum foil bags. They are heavy duty and work PERFECT for just this thing.

I make it a point to cook potatoes, onion, garlic, butter, bacon bits, and anything else I can think of in these bags. You can pull them out of the fire and unroll them to check the potatoes and close them back up with no problems! Works like a champ!

And let me answer your other post about preparing ahead of time.

We prep everything ahead of time and throw into these bags. All the ingredients (including the butter) goes in before we leave the house!

I swear by them - but make sure you get the HEAVY DUTY ones.

as far as bacon goes, you can also buy real bacon that is pre-cooked. All you have to do is warm it up in the micro (or grill). I cook our raw bacon on the grill every morning. I will set some aside for this recipe on our next trip.

I'll have to try those foil bags. I found some recipes that called for the foil bags, but couldn't find the bags. I didn't think they still made them. I'll look more carefully next time. I love to cook but hate to do dishes - foil cooking bags would be great.

I also make a similar recipe and the foil bag would be great. I usually cube the potato's, and i just throw in the fire for about 20-30 minutes. Sometimes the potato's are a little raw, sometimes they are over done, but that is the fun of it all!!
