Dutch Oven stuff

The thrid Saturday of each month is the time our Dutch Oven group meets for cooking and fellowship. Due to the burn bans in our area and personal conflicts, we missed almost the entire year of 2011. Today we finally had time and made our way to Martin Creek State Park near Tatum, TX. There was only one other couple there besides DW and I. We had never met them and were pleased to find them great folks to visit with during our time together. We fed the four of us and most of the staff at the park. DW and I talked about camping here again soon but learned that the State of TX may be closing a lot of parks due to funding and lack of visitation. I also learned that this park may be one on the chopping block. The closings could come as early as February of next year. I believe this was caused by the low lake levels and burn bans keeping people away. Makes me very sad.

On a brighter note, this is what the four of us managed to cook up:

BobnPi:
Cabbage with bacon
Buttermilk Cornbread
Robert's Pasta Bake (something my son came up with and is very tasty)


Bill and JoBeth:
Trash Can Turkey (AWESOME)
Yeast Rolls
Green Bean Cassarole
Cranberry Apple Pie with Pecan crust and Crumble something on top.

We had a great day. Weather was cool but no wind. I had a double burner propane heater for DW so she had fun tool. Wink

Sounds like you had a good time sad but true we also are loosing some good camps due to funding. I just hope when I retire there are still some open to go and see. I really have not been anywhere in this country (calif. and Oregon is all) and I would like to see more of it...

Need to come up with a menu I think. Xmas eve I made a Peach Cobbler in my 12" deep DO which was great. Now that I've gotten the cobblers down, I need to start some meat dishes..... have to see what I have in the freezer..

We made THIS for Christmas eve dinner and it was GREAT!!

We dont have a big DO, just a little 5 quart one, but for the 2 of us, it was great.

All my DO's are camp style, so use briquets top and bottom, not in oven...
