Something to watch.
We spend the winter in an older Challenger with another brand of oven. It looks just like the one in our Wildcat for whatever that's worth. Anyhow we noticed stuff was overcooking. I bought a cheap oven thermometer and it says the knob is pretty much consistently 50F low over what's going on inside of the oven. In other words if you set the oven to 350 it's actually 400.
So, you might want to watch that and perhaps check yours.

We have one of these hanging in our oven...

Got ours at the local hardware for a couple of bucks. So far so good.

Sounds like the thermostat in the oven is messed up. Wonder if it could be replaced?

Someday I might get fancy and worry about 425, good for stuff in puff pastry. But realistically everything I cook now is at either 325 or 350. Well, ribs need about 250 or so, but I can fake that with careful eyeball calibration and I try to do them outside over charcoal and wet wood chips and that grill has a thermometer I installed.

Years ago we had a gas oven that wasn't heating properly. I can't remember if it just wouldn't heat at all or if it did like yours - got too hot. Whatever it was, Scruffy carefully, and very lightly, cleaned the thermostat wire inside the oven with emery cloth. After that it worked fine.

And, he loves every minute of it.
Fixing the oven wasn't a Tater project, though. He did that on his own. My job back then was "chief cook and bottle washer." He was just helping me do my job.
