Peachy Ribs
Peachy Ribs
Serves 4-6
2 racks pork baby back ribs
1 8-oz can peaches in light syrup – undrained
4 Tablespoons catsup
4 Tablespoons light brown sugar
2 Tablespoons cider vinegar
1 Tablespoon brown mustard
Salt and pepper to taste
Cut ribs into 2 or 3 bone portions
Place ribs on grill over drip pan that is surrounded by hot charcoal briquettes – cook for 1 hour, turning occasionally. Add charcoal if needed to keep the ribs cooking.
For the sauce - mix all of the other ingredients in a blender.
Coat the inside of a 9”x13” cake pan with non-stick cooking spray.
After ribs have cooked for 1 hour, transfer them to the cake pan. Generously brush sauce on them, and place the pan on the hot grill. Continue cooking ½ hour (or longer if needed) until done, brushing with the sauce about every 10 minutes.
