Old breakfast treat for my family.
We don't have a name for it. Slice of bread, bacon, pinnapple ring, american cheese slice.
Fry or nuke the bacon (takes 1.5 strips per slice of bread)
Open and drain the pinnapple ring on a paper towel to remove most of the moisture.
Lightly toast the bread.
On the lightly toasted bread, place strips of bacon to cover. Place pinnapple ring on top of the bacon. Place one slice of cheese on top of the pinnapple and put back in the toaster (or microwave) until the cheese is slightly melted. (As a guide, I keep an eye on it and when the cheese sinks down inside the pinnapple ring, it's ready.
This has always been a treat for my children. I still make this for DW as a surprise breakfast. She never knows what I'll bring her.

I got them from my mother and have been eating and drinking them for over 50 years. It's tradition in my family.

Well Bob, I tried the "BobnPi Surprise Breakfast", and it was actually pretty good. I really thought the taste of the pineapple would overwhelm everything, but it did not. It was actually quite "mellow", and the mix of all the different tastes was very good. I am "surprised"! I think this is something the kids and grandkids would especially love.
