Cowboy Casserole
Time for another tried and true recipe...
Cowboy Casserole
1 lb. ground beef
1 med onion, chopped
1 can ranch style beans
1 can whole kernel corn, drained
1 cup cheddar cheese
1 pkg cornbread mix
Brown 1 lb. ground beef with one medium onion.
Add one can ranch beans and one can corn; mix and heat thru.
Place beef mixture in a prepared 1 1/2 qt casserole ; Sprinkle cheese over top.
Prepare cornbread mix according to pkg directions and pour over meat and cheese.
Bake as directed on cornbread mix.

I made this - it was very good.
My daughter and her husband were going to bring their dogs down so we could doggersit for a few days while they were getting their fence replaced. I wanted something quick and easy, and thought of this recipe.
I thought it could use a little seasoning, so added a small amount of chili powder, some garlic salt, and a little bit of ground cumin.
It was delicious. I served it with sauteed zucchini and sliced tomatoes.
Scruffy said I can make this one again, and I definitely will. Thanks, TC.

I'll have to follow your lead and spice mine up a bit more just to see what I've been missing.
It's a staple around here because we usually have all the ingredients on hand.

When I was buying the Ranch Style beans, I saw some that had jalapenos. I thought that would be great in the casserole, but then chickened out because I was afraid it might be too "hot" for me.

TC, recipe sounds great. Not to sound stupid but, are ranch beans the same as baked beans?

Nope, they are advertised as "Ranch Style" beans. But, you will find them next to the baked beans.

The only thing I would chage is a bit of cajun seasoning and use buttermilk to make the cornbread. mmmmmmmmm
