Two new recipes to share...

We had friends out to the river over the weekend for a cowboy cookout.
Everything was prepared over a hardwood fire!

Menu:

Ribeye steaks/buffalo burgers
Ranch beans
Fried potatoes w/onions
Country fried corn
Grilled apples

And two hours later...

S'Mores headbanger


Here's a couple of recipes from this weekend's cowboy cookout...they were a huge hit!!

Grill Roasted Apples

4 sweet eating apples (I use; Gala, Fuji, Pink lady)
¼ cup golden raisins
4 cinnamon sticks
4 T melted butter
½ C maple syrup
½ t ground cinnamon
½ t ground nutmeg

Prepare med-hot grill/coals.
Place a large sheet heavy aluminum foil, on a hard work surface.
Core apples and slice width-wise making rings (leaving skins on).
Stack apples in three rows in a fallen domino pattern.
Sprinkle the raisins over the top of stacked apple rings.
Combine maple syrup and butter; heat until butter is melted (about 1 min.).
Add the remaining ground spices to the butter and syrup; stir until combined.
Drizzle butter/syrup mixture over apples and raisins. Place cinnamon sticks on top.
Fold foil on top and ends to seal; place over heat.
Cook until apples are tender (approx. 25 to 30 minutes).
Transfer cooked apples/raisins w/juices to a serving bowl; serve warm.

Serves 4

Country Fried Corn

4 slices thick sliced bacon
1/2 small onion, chopped
8 ears fresh sweet corn
salt and pepper to taste

Place a Dutch oven or kettle over medium/high heat…
Cut the four bacon strips into small pieces; fry until crisp.
Remove bacon from kettle; set aside. Drain or pour off all but about 2 tablespoons of bacon fat.
Add the chopped onion to the fat and cook until soft.
Husk the corn, cut the kernels from the ears and scrape the cobs of the moisture into the pan; add the corn to the onions in the skillet and cook for about 5 minutes stirring regularly. Add bacon to corn mixture, and cook another 2 to 3 minutes.
Season with salt and pepper to taste.

Serves 8
