Skillet Chicken and Dumplings

This is a favorite. It's very easy to make.

1 can (10 3/4 ounces) cream of chicken soup (I used 98% fat free cream of chicken soup)
1 1/2 cup milk (skim milk is okay)
1 10-oz pkg frozen mixed veggies (the kind you would use for soup - corn, peas, carrots, green beans)
2 cups diced cooked chicken (I cook chicken at home, dice, package and freeze it)
1/2 teaspoon ground black pepper
1 tablespoon chopped parsley
1 pkg of 5 buttermilk biscuits


Heat soup, milk, frozen veggies, chicken, ground pepper and parsley in medium skillet over medium heat until mixture comes to a boil. (I used a cast iron skillet.)

Cut biscuits into quarters and scatter the pieces evenly on top of the boiling mixture. Cover lightly with a "tent" of foil, and simmer 5-6 minutes. Turn biscuits over, cover lightly again, and continue cooking about 5-6 minutes more. Sprinkle with parsley for a garnish, if desired. Makes 4-5 generous servings.

Note: If you don't have frozen mixed veggies, 2 cans of mixed veggies will do nicely.

This sounds really good Tater! By adding the mixed veggies, it's almost like chicken pot pie but with dumplings instead of a crust.

We'll have to give it a try.

It was a toss-up whether to call it Chicken & Dumplings because of the dumplings, or Chicken Pot Pie because of the veggies. :) The dumplings won. In cooler months, when we appreciate the heat from the oven, after the mixture has come to a full boil, I arrange the cut up biscuits all around the edge and put it in the oven at about 400 deg to bake until the biscuits are brown. The biscuits should stay on top. If not, you've got dumplings! :) If you arrange the biscuits with their cut side (pointed side) up, they look real pretty. Don't turn the biscuits over if you put this in the oven.

Creamed chicken and veggies under a quilt

Chicken and veggies a la Tater (That makes me wonder if you could put tater tots over instead of dumplings?) Course, then it would be chicken and veggies a la taters by Tater. lol!

Oooohhhhh. I love tater tots. :)

I think tater tots would make it a fritatta. No... gotta have eggs and cheese, too. That reminds me of another recipe I want to post.
