Camper's Chop Suey
We're relaxing in the trailer, enjoying some wine for Scruffy's birthday. He's reading a book, and I pulled a cookbook off the shelf. This is an old Woodall's Campsite Cookbook - copyright 1970. I thought I'd share some of the recipes with you. Here's one (Disclaimer: I don't know if I've ever tried it.):
Camper’s Chop Suey
2 tablespoons salad oil
1 pound round steak, cut in thin strips
1 10 ½-oz can condensed golden mushroom soup
½ cup water
1 tablespoon soy sauce
1 ½ cups sliced celery
1 cup green pepper, cut into 1-inch squares
½ cup green onion, cut in 1-inch pieces
Cooked rice
Heat oil in skillet, add beef and brown. Add remaining ingredients except rice. Cover and cook over low heat for about 20 minutes, or until meat is tender. Stir occasionally. Serve over cooked rice. Serves 4.

Would you believe we haven't been to a store since we left home? Well, not a store that sells round steak. We could get everything we needed from the trading posts at Fort Wilderness - but they don't carry fresh or frozen meat.
I do plan on trying it.

Yes, the store at Fort Wilderness is great!! Did you guys get to enjoy a hoe-down at the Hoop-de-do Cafe while you were there?

We've done the Hoop-de-doo several times. I think the last time was probably in 1995.... probably time to see it again. It never changes, though. When we were having dinner at Trail's End one night last week, three of the performers (in costume) walked through. The red-headed funny gal said "Hi."

No, never did it, but maybe in October when we go back. By the way, we did do the after hours Christmas deal in early December when we went, and it was well worth it. I think I like the not so spooky halloween better, but I would do both of them again.
