Spam 'n Yams

Spam 'n Yams

2 medium sweet potatoes peeled and cut into 1-inch cubes
3 tablespoons margarine cut into pieces
1/2 cup lightly packed brown sugar
1/4 cup chopped pecans
1 can Spam
20 whole cloves
1/4 cup apricot preserves

Apply cooking spray (Pam or similar) into a baking dish
Put first 4 ingredients in baking dish in the order given above
Stick the cloves into one side of the Spam - place the Spam with the cloves on the top on the other ingredients
Spoon the apricots on top of the clove-studded Spam.

Cover and bake at 350 deg F. for 50 to 60 minutes. Check to be sure the sweet potatoes are soft (let it cook another 5 minutes, if needed).

Tater

Serve.

Now that's a very interesting recipe. I happen to like Spam a lot but my wife doesn't. I may have to bake this and serve it to my wife under an assumed name. Perhaps call it Ham 'n Yams.

This would work equally as well with canned ham.

We're having ham for Christmas dinner, and if we have any leftover, we'll make this using a stack of ham slices.
