Deviled Pterodactyl eggs
Here is a recipe sure to make your friends love you after a plate full
. I can't take full credit though, I borrowed the idea from another site.
12 large eggs
1/3 cup mayo
2 tbsp dijon mustard
2-3 tbsp milk
1/4 tsp coarse black pepper
dash of paprika and cayenne pepper to season.
I placed the eggs in the smoker as I was smoking a couple of butts this afternoon. I hard boiled them first for 8 minutes and then into the smoker. I smoked with hickory for about 2 hours at 250 degrees and then removed to cool. Once cool, I carefully sliced to remove the yolk for the deviled egg process. You can see how the smoke penetrated the egg and made a nice smoke ring around the yolk. I had to throw a few away that split wide open while smoking and became too rubbery. My family ate the whole batch and were begging for more.
