Armadillo Eggs-An appetizer with a kick!

This tasty treat was told to me by a fellow camper who first saw this while tailgating at Tiger stadium.

8-10 Fresh whole Jalepeno peppers
1 package Philadelphia cream cheese
1 pound Jimmy Dean sausage
4-5 strips of Thick sliced bacon
10 toothpicks (soak in bowl of water for about 15 minutes)

Start by cutting the peppers in half lengthwise. Hollow out the peppers by scraping out the seeds with a spoon. Next fill the pepper with the cream cheese. Now take about a meatball sized chunk of the sausage and form it into a patty. Next, mold the sausage around the pepper until the sausage completely encases the pepper. Cut the strip of bacon in half and wrap around the pepper; secure with toothpick. I usually sear the eggs on high heat for a few minutes to get the meat to set, then turn the heat down to allow the peppers to soften up. Remove from heat and let it cool for a few minutes before digging in. I learned this the hard way affraid

:: Whew!! :: These sound tasty.... Might just give them a try. Now in all honesty, you had me going there for a minute! You see, the former Scoutmaster of my son's BSA troop here in Pearland, is one of these "if you kill it, you can grill it" kind of guys. He IS the one you want to take with you if you ever get stranded in the wilderness. He's eaten just about everything on 4 legs and says even "Nutria are good eatin'".

So when I saw the title of "Armadillo Eggs"... you had me wondering.

We did try them...

We often "field test" recipes when BBQing in the back yard just so we know what to expect when we are out camping. So we tried these this weekend and they were GREAT!! Now I may have mis-interpreted the instructions as it said to cut them in half, but it didn't say anything about sliding the halved Jalepeno's together binding them with the sausage. So were 10 sliced peppers supposed to make 20 eggs, or 10 modest ones?

I didn't leave them as halves. I put them back to together so that 8 halved peppers were still 8 peppers when encased in sausage. But instead of a half slice of bacon it took more like a full slice to wrap around. When wrapped, they looked more like tennis balls in size. I did them on my gas grill, on the hot side for about 4-5 minutes just to get the flames going and sear the outside, then moved them over to the "cool" side for a good 20 minutes to cook through and through. Now when I saw sausage or bacon and needed extra I used the tongs and moved them nearer the hot side. I was checking on them about every 2-3 minutes as with the bacon and sausage, flare ups needed the squirt bottle of water now and then. I'd let it flare a little but not to have all 8 of my Armadillo eggs fully engulfed.

Fully enjoyed by all who tried them! cheers

We tried these in the black hills last week and what a treat. Really went well with a cold michelob amberbach. Neighbors looked at me like I was trying to start an instant heart attack with the sausage and bacon with the cream cheese....lol. Oh well, that is what camping is all about.

I keep them in half ie ten peppers equal 20 eggs. They cook a bit faster, and the added bonus is that they are half the calories Laughing

Once duck hunting is SW Louisiana, my Dad, unknowning to me, made a gumbo with what I thought was tame rabbit a friend had given him. The leg quarters were huge, but what do I know about tame rabbits. When I bit into the leg, the bone had a huge fin on it that ran the length of the thigh bone. I looked at my Dad and asked him what I was eating. His reply...Is it good? I responded with a Yes Sir. His next statement was, then eat before it gets cold. It wasn't until a few days later I found out that it was nutria. But I will say, it was tasty.

Dennis, those armadillo eggs do sound good. I'll have to try them soon.

I'm with ya! I grew up west of Baton Rouge, and our motto was..."we'll eat anything that doesn't eat us first"

My Dad always said, wrap a piece of bacon around it, it will make anything taste good!
